Method

In a blender, combine banana, eggs, oats, Power Food, cinnamon, baking powder, vanilla, and salt. Blend until smooth.

Heat a non-stick pan over medium heat and lightly grease.

Pour 1/4 cup batter per pancake onto the skillet.

Cook for 2–3 minutes or until bubbles form on top. Flip and cook another 1–2 minutes.

Serve warm with your child’s favorite toppings — fresh fruit, a drizzle of maple syrup, or nut butter.
