Method
Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
In a large bowl, mash the bananas. Add eggs, oil, maple syrup, almond milk, and vanilla. Mix well.
In a separate bowl, combine flour, baking soda, salt, cinnamon, and Power Food.
Fold dry ingredients into wet until just combined. Do not overmix.
Stir in optional walnuts or chocolate chips.
Pour batter into the prepared pan and smooth the top.
Bake for 50–55 minutes or until a toothpick comes out clean.
