Method

Roast the squash: Preheat oven to 400°F. Toss squash cubes in 1 tbsp olive oil, season with salt and pepper, and roast for 25 minutes or until tender.

Massage the kale: Add kale to a large bowl. Drizzle with remaining olive oil and lemon juice. Massage for 2–3 minutes until leaves soften.
